Yummy Mini Frittatas
My children love baking. These frittatas can be served warm as a healthy kids part food or cold for a healthy school lunch.

Ingredients:
125ml evaporated milk
60g Emmantal cheese
100g frozen peas defrosted
10 slices of cooked ham
100g of ricotta cheese
6 free range eggs
1 tbsp of chopped chives
Salt and Pepper |
Preparation Time: 10 mins
Cooking Time: 15 mins
Serves: 4 children |
Steps
- Heat the oven to 180oc / Gas mark 4
- Whisk the eggs and evaporated milk in a large bowl
- Add to the bowl the Emmental cheese, herbs and the defrosted frozen peas
- Use some spray oil to grease two muffin trays ( the mixture makes 12 mini muffins)
- Add the sliced ham to each muffin hole
- Add the ricotta cheese pieces to each muffin hole
- Spoon two desert spoons of the mixture into each muffin hole
- Cook the muffins for 10-15 minutes until the egg mixture is cooked through
- Either serve warm or allow to cool
