Wraps

On a recent camping trip we did a communal lunch for 19 kids. Their favourite was chicken wraps and we had them coming back for more.

You might have seen them in your deli. wraps are rolled up sandwiches which can be filled with almost anything, which means you don’t have to keep giving your children the same pack lunch all week.Their easy to make, and kids love them.

Here are are some of our favourite wrap recipes. You can experiment yourself.

Preparation Time: 20 mins
Cooking Time: 0 mins
Serves: 2 children

Ingredients:

  • 2 Boneless Chicken thighs with skin removed
  • 2 spring onions
  • 2 tomatoes
  • 2 lettuce leaves or a handful of fresh spinach leaves
  • 4 soft flour tortillas or mountain bread
  • 2 Tablespoons of mayonnaise

Steps

  1. Cook the chicken in a little olive oil in a frying pan.
  2. Remove the chicken Once cooked and leave to cool.
  3. Once cool, cut the chicken into strips about 5mm thick.
  4. Trim the ends of the spring onion off and finely slice them.
  5. Warm the flour tortillas in a microwave for 10 to 20 seconds
  6. Spread half a tablespoon of mayonnaise onto one side of each flour tortilla. Add some lettuce and spring onion and chicken in the center of the tortilla. Keep the filling away from the edge of the tortilla.
  7. Roll up the tortilla so that the filling is wrapped up in the middle.
  8. Cut the wraps in half, wrap each half in clingfilm or foil, and store in the fridge overnight.

Alternatives

Peking Duck Wraps

Repeat the same steps as in the chicken wraps but substitute the chicken with peking duck, and replace the mayonnaise with hoisin sauce.
How to make Peking duck

Ingredients:

1 duck breast with skin on (175g-200g)
2 tablespoons of hoisin sauce
1/2 teaspoon of Chinese five spice powder
4 soft flour tortillas or mountain bread

Method

  1. Dry the duck breast on kitchen paper and then cut the duck into thin slices.
  2. Spring the Chinese five spice over the sliced duck until the duck is covered on both sides.
  3. Heat some vegetable oil in a frying pan and then add the duck to the hot oil.
  4. Fry the duck gently for 5mins turning the duck over half way through.
  5. remove the duck from the frying pan and leave to cool.
  6. spread the hoisin sauce over the warm tortillas and then add the remaining ingredients, roll the tortillas, and serve.

Tuna Mayonnaise Wraps

Replace the chicken with a can of tinned tuna in spring water
Drain the tuna, add a tablespoon of mayonnaise, mix together and follow the other steps in the chicken wraps.
